Spanish Rice and Beans in Honor of my Grandma Lydia Ruiz

Cutting Board, Two Pots, One Big One Small, Small Knife for Cutting

Ingredients

Fresh Red pepper, Green Pepper, Onion, Garlic, Olive Oil, Cilantro, Salt, Pepper, Oregano, Two small cans of Tomato Sauce, White Rice, Spanish Olives


Preparation

Cut all ingredients fine. Keep in mind that Cilantro is a lovely and strong spice and usually I don't use too much because of it's potency!  Don't worry about having too much ingredients, as y ou will also use these ingredients for your beans too! Any leftover you can save in a jar and be sure to fill the jar with some olive oil. In this way you don't have to use oil for the next time you make this as you will already have it prepared. 

Sauté a portion of your ingredients in big pot for chicken and rice. After your ingredients become translucent add in chicken and brown on all sides. Then add in a small can of tomatoes sauce and a can of water. Lower gas and make chicken stew in the tomato sauce with ingredients for 20 minutes. 

After 20 minutes add in your rice. Usually I add in two cups of rice or three so I can have leftovers the next day. To each cup of rice add in one cup and 1/2 of water. Return gas to high until it boils. You can add your Spanish olives at this time. After everything comes to a boil lower gas again and make the rice and chicken cook and steam about 20 to 25 minutes. During this time do not turn rice just let steam and cook. After the time then turn your rice and taste. If it needs more time cook a few minutes more. Enjoy! 

Beans

If you are using non organic beans make sure you rinse beans in colander as sometimes the non organic beans have an extreme amount of salt. 

If you are preparing fresh beans from the night before being previously soaked wash beans as well. 

Using another portion of same ingredients for your beans cook the same way. Sauté and then add in one can of tomato sauce with water. You can lower gas and cook for 15 minutes and then add beans and cook 15 more or longer to your desire taste. I find also just adding everything together for the beans and cooking altogether for half hour works well too. 

**Optional** If adding in sauce is too much you can also make without sauce for beans.
