Eggplant Fajita!

These delicious fajitas are a fast pick me up to any day! I was feeling adventurous not knowing what to do with my baby eggplants I bought at the farmers market so here is what I did!

What you need:

Frying Pan

Safflower Oil

Onion

Baby Eggplant

Refried Beans

Optional: Yellow Squash, Salad, Fresh Tomatoe, Sweet Green Pepper


Directions: Cut eggplant into bit size and easy to bite designs! Stir fry in a tablespoon of safflower oil. Cut onion and fry till translucent. Throughout cooking,  If this is not enough oil and you are worried about using too much oil you can always add water to do a little water saute!

Add eggplant and squash if desired.

In meantime heat your refried beans.

On the side you can cut your salad and tomatoes. For easier digestion you can break up salad more and add sea salt so your body has to do less work for digestion. Sometimes salad can be hard to digest for some.

In small pan heat up your fajita or if you are worried about gluten you can always buy corn tortillas for gluten free.

When stir fry is done and refried beans are hot, put some one your nice warm fajita or tortilla. Add salad, tomatoes, peppers of your desire for toppings!


This can be vegetarian, gluten free, or vegan! Whatever you choose! Have fun and enjoy!!!!!
