20 minutes plus chilling 35 to 40 minutes cooking time
You will need:(use organic if you can)
1 1/4 cups of whole wheat flour
3/4 all purpose flour
1/4lb 1 stick organic chilled butter
1 tablespoon of superfine sugar and a pinch of salt
3 organic apples peeled cored and sliced
1 teaspoon of organic lemon juice
1 teaspoon of almond extract
1-2 tablespoons dark brown sugar to taste (optional) You can make it plain by not using extra sugar and sticking to the natural sweetness of the fruits
1 1/2 cups fresh preferred or frozen blackberries or raspberries
2 tablespoons of chopped almonds if using. This is also optional
Place the flours in a large bowl, add the butter and blend it with the fingertips until the mixture resembles fine bread crumbs. Stir in the superfine sugar and salt. Mix in 31/2 to 41/2 tablespoons cold water adding enough water to form a dough and knead it lightly until smooth. Divide into 2 balls one slightly larger than the other. Wrap each in plastic wrap and chill for 30 minutes.
Put the apples, lemon juice, almond extract and brown sugar (optional) in a bowl and toss to coat. Mix in the blackberries or raspberries and set aside.
Roll out the larger ball of pastry on a lightly floured surface to fit a 9 inch nonstick pie pan. Press the pastry into the pan to come up the sides, moistening the edges with a little cold water. Roll out the smaller ball to fit as a lid. Spoon the fruit evenly over the pastry shell, the sprinkle with the almonds if using. Top with the pastry lid, pressing down the dampened edges to seal. Trim away the excess pastry with a sharp knife. You can also throw some slices on top of the lid as well if you want.
Cut 3 small incisions into the top of the pie and place in a preheated oven 350 for 35 to 40 minutes or until crisp and golden. Allow to rest for 5 to 10 minutes then serve in slices or with?? I will leave that up to you!
